Nanaimo Bars

 Bottom Layer

1/2 cup unsalted butter

1/4 cup white sugar

5 tbsp. cocoa

1 egg

1 1/4 cup graham crackers(crumbs)

1/2 almonds (chopped)

1 cup coconut

Melt butter, sugar, and cocoa on top of a double boiler. Add egg to cook and thicken, continue stirring. Remove from heat and add crackers, almonds, and coconut. Press into a greased 8x8 pan. 

Second Layer

1/2 cup unsalted butter

2 tbsp. & 2 tsp cream

2 tbsp. vanilla custard powder

2 cups powdered sugar

Cream butter, cream, custard powder, and sugar. Beat until light. Spread over cooled bottom layer.

Third Layer

4 squares semisweet chocolate

2 tbsp. butter

Melt chocolate and butter over low heat. Cool. Pour over the second layer. Chill until hard. Cut into bars.
