1/2 cup sugar
1/2 cup butter (softened)
1 tsp salt
1 tsp vanilla
2 eggs
1 1/2 cups flour
3/4 cup cornmeal
1 Tbsp. baking powder
1 1/3 cup milk
Mix sugar, butter, salt, and vanilla. Stir in one egg at a time. Combine flour, cornmeal, and baking powder in a large bowl. Then mix into egg mixture. Stir in Milk.
Bake in a greased 8x8 greased pan at 400 for 20 minutes. (I usually need to bake at least 5 minutes longer)
This is our favorite cornbread recipe. We got it from our friend Buffy. The original recipe calls for 2/3 cup sugar which makes it too sweet. 1/2 is even on the sweet side. It goes great with our chili recipe.
