Pruhs Potato Salad

Ingredients:
6-8 medium potatoes
1 lb bacon
6 boiled eggs

Sauce:
2 1/2 cups mayonnaise
1 Tbs dill pickle juice
1 Tbs yellow mustard
2 tsp white vinegar
1 clove garlic, minced
2 tsp white sugar
1 tsp dried dill weed
1 tsp salt
1 tsp black pepper
1 med onion, chopped

Boil potatoes 15-20 minutes. 


I am not the biggest potato salad fan. You could not pay me to eat store-bought potato salad. My sister and her husband spend a summer perfecting their potato salad recipe. And they accomplished perfection. I don't think you will find a better potato salad out there.

We made this once for a Sunday dinner we were invited to on short notice. We didn't have any dried dill week so we used fresh cilantro. I think it put a nice spin on it. But if you are trying this for the first time, go with the original ingredients.
