Paleo Pumpkin Porridge

 1/4 cup + 2 Tbsp. almond flour

2 Tbsp. coconut flour

2 tsp ground flax seed

2 Tbsp. coconut sugar or maple syrup

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp pumpkin pie spice

3/4 cup water

1/4 cup full fat coconut milk

1/4 cup pumpkin puree (not pie filling)


Put all the ingredients into a small saucepan and whisk until combined. Heat over medium heat until hot. Alternatively, place in a microwavable safe container, cover, and heat for 30 seconds at a time until heated through.

Let cool 5 minutes before serving.

If desired, top with coconut cream, coconut sugar, maple syrup, and/or pecans.
