Minnesota Wild Rice Soup

6 Tbsp. Butter

1 Tbsp. Minced Onion

1/2 cup Flour

3 cups Chicken Broth

2 Cups Wild Rice, cooked

1/2 tsp Salt

1 cup Half & Half cream


Melt butter in a saucepan and saute onion until tender. Blend in the flour and then gradually stir in the broth. Cook, stirring constantly until mixture comes to a boil and boil for 1 minute. Add cooked wild rice and salt and simmer for about 5 minutes. Blend in half & half and heat to serving temperature. You can also add cooked diced chicken, sliced carrots, mushrooms, slivered almonds, etc. Makes 5 1/2 cups.

Directions for cooking wild rice: 1/2 cup uncooked wild rice yields about 2 cups cooked rice

1/2 cup Wild Rice

1 1/2 cups water or broth

Rinse uncooked wild rice in hot tap water several times. In a saucepan bring water/broth to a boil. Stir in rice and reduce heat to low. Cover and simmer for approximately 60 minutes. Remove from heat and let stand 5 minutes.

Microwave: In a 2-quart microwavable dish combine 1 cup rice and 2 1/2 cups water/broth. Cover and microwave on high for 5 minutes. Reduce setting to 50% power and microwave for 30-35 minutes. Let stand for 10-15 minutes. Yields about 3-4 cups cooked rice.


I got this recipe from a lady I used to work with in Minnesota, Gayle Zook. We always add the chicken and some veggies. It makes for a hearty soup.
